Waking up in the morning to a alarm clock just isn’t fun. You rush to get ready for work and you rush out the door without a breakfast. Perhaps you grab a bagel with cream cheese, perhaps a muffin. If you’re really lucky, you might get a get a pastry. But most of the time you just skip it all together.
Unfortunately, when it comes to being healthy, none of these options is a great way to start your day.
So here are some inexpensive, healthy breakfast ideas that don’t take to much time out of your morning.
1. Breakfast Burritos. You can make up the scrambled egg’s ahead of time and put cheese on the top. Let cool and place in fridge. In the morning take a couple of scoops of egg and cheese and put them in a bowl. Head for the microwave and heat for 1-2 min. Then wrap in a warm four tortilla. I saw these being sold at Costco for $1.04 each. We can make them for less then half of that.
2. Instant Oatmeal, flax seed, blueberries & almonds. After microwaving the oatmeal, add ground flax seed, frozen blueberries, and sliced almonds. You can add a little cinnamon and honey (not a lot) if you’re using the non-instant oatmeal. That’s four power foods, full of fiber, nutrients, protein, and good fats. With only a couple of minutes of prep time. And very tasty! You can make this once for the week and put it in individual bowls with lids and then every morning pop the oatmeal in the microwave and in for 2 min. You’re done! Just add toppings.
3. Scrambled egg beaters. Add some onions, green peppers or other veggies. Some light soy sauce, maybe some garlic powder, and black pepper. Stir-fry with a little olive oil. Eat with whole-grain toast. Fast and delicious.
4. Fresh berries, yogurt, granola. Get low-fat yogurt (not non-fat, as it often has too much sugar) or soy yogurt. Then cut up some berries or other fruits, add some healthy cereal.
5. A banana with whole-wheat toast. You can use Almond butter for your toast, it is healthier than peanut-butter, with lots of good protein to fill you up.
6. Fresh fruit salad. Cut up some apples, melons, berries, oranges, pears, bananas, grapes … any or all or whatever your favorite fruits are. Add a little bit of lime or lemon juice. Perfect. You can cut this up the night before grab it and eat it on the road.
